Quick and Healthy Chicken and Pesto!

We love pesto in our home, and this healthy chicken pesto has quickly become one of our favorites! Honestly, I was a bit worried my husband wouldn’t be a fan of my newest mealtime concoction! He doesn’t care much for cauliflower, and I was a tad afraid I would ruin his love of pesto! To my delight, he LOVED it! This is great news, due to the fact we are trying to cut back on our carbohydrates!

You all know how much I enjoy baking, so I have to get creative if I want to keep baked goods as a staple in my life! For me life without cake just isn’t life at all – seriously! So, without further ado, here is our family’s latest low-carb favorite!

Quick and Healthy Chicken and Pesto

For this recipe, you will need:

4 oz jar of pesto

1  ½ lb chicken breast, cut into bite size pieces

¼ teaspoon garlic powder

Small can of sliced olives

¼ cup sundried tomatoes (if they are packed in oil, drain off the excess)

2 – 3 cups fresh spinach (depending on how much you want)

1 microwave steamer bag of cauliflower rice

¼- ½ teaspoon chili pepper flakes (if you like it spicy)

Grated Parmesan for topping

Cook the chicken in a nonstick skillet until no longer pink and sprinkle with garlic powder. Meanwhile, cook the cauliflower in the microwave according to package directions.

Once the chicken is no longer pink, add the spinach, olives, sundried tomatoes, and chili pepper flakes, then cook until spinach wilts.

Add the cauliflower and pesto. Mix until everything is evenly coated.

Top with Parmesan as desired and enjoy!
