I’m going to get real here. I mean super-real. As I sit here today, in my disaster of a kitchen, trying to decide what I want to say this week, I am completely wiped. Wiped, like, tired of wiping poop off everything from my daughter’s crib to the carpet to my foot! I know she will potty train soon, and that is why she keeps leaving her diaper all over the house, but in this moment, I am so tired that I can hardly even find the words to correct my children. I usually just end up saying “Stop -whatever it is you are doing- just STOP!” If you haven’t had a toddler, you might be thinking that it can’t be that bad and that I must be blowing things out of proportion, but trust me: it’s that bad!
Of course, none of this negates the facts that I love them with all my heart and thank God for them every day; their hugs warm my soul, and I wouldn’t trade these precious moments for the world. The funny thing is, I tend to deal with stress by making messes of my own! Weird, right? Don’t knock it till you try it, because crafting and baking are some of the best stress relief there is, and hey – if you can’t beat them, you may as well join them, right? Right? So this week, my son and I made these amazing Easter M&M cookies! They are so good, and use common ingredients, making them perfect for quick stress relief!
All the chaos of the last week (like the kids breaking our 3D TV, among other things) made me think about why I really started this blog! Besides being a place to celebrate the ones we love, share creative ideas, and enjoy awesome recipes, this is a place to be real; to be honest about the joys of life while acknowledging the trials, as well, and to encourage each other along the way. After all, this life is temporary and the ones we love are the only eternal things we have; with Easter only a few days away, I have been trying to intentionally focus on this! The most important thing is for our loved ones to know the One who puts the celebration in our hearts, and I cry out to Him today to fill me up with the joy only He can give. Jesus died, but He rose again on the third day, and to me, that is the ultimate reason to Celebrate! Happy Easter, my friends, and my you find true celebration in your hearts!
Easter M&M Cookies
For this recipe, you will need:
3 ¼ cups flour
¾ teaspoon salt
¾ teaspoon baking soada
1 cup melted butter
1 ½ cups packed brown sugar
¾ cup sugar
2 large eggs
1 egg yolk
1 tablespoon vanilla extract
1 cup M&Ms
1 cup chocolate chips
Mix the flour, salt and baking soda together and set aside. Mix the melted butter, brown sugar, and sugar in a large bowl. Add the egg, egg yolk, and vanilla, and mix well. Add the flour mixture, gradually stirring in until just mixed. Stir in chocolate chips and very gently stir in the M&Ms (being careful to not break the pretty coating). Using an ice cream scoop, drop mounds of dough onto a parchment-lined cookie sheet, but do not flatten. Bake at 325 degrees for 14-16 minutes or until lightly golden. Cool slightly on the cookie sheet. Remove and cool completely on a wire rack.
