What better time is there to celebrate than at a journey’s end? These gluten-free cookies would make a great take-along for hikes or travel, but that’s not exactly the type of journey I’m talking about today. You see, not long ago, my mom came to a long journey’s end of a different kind: she retired from a forty-year career as a NICU nurse!
While I was pondering what my son and I could make to help celebrate this momentous occasion, we talked about how Grandma wouldn’t have to go to work anymore, which made him very excited (he’s a smart little cookie, so I am sure he has figured out this just might mean he gets more “grandma time”)! Of course, he could make her a card, draw her a picture, or do any number of other typical “kid projects,” and any of these would have brought her joy, but they just didn’t seem special enough.
Then I remembered how much she had enjoyed these little cookies last time I made them! They are very easy to make, so a great recipe for my little guy to help with, they contain ingredients that don’t generally require an extra trip to the grocery store, they are gluten-free, which is of very high importance for Grandma, and -best of all- they are DELICIOUS!
Whether you are gluten-free yourself, have a special someone who is gluten-free, or just like an easy yet delicious cookie recipe, this one is for you! I would love for you to join me in my journey of celebration; please subscribe to my e-mail list to get in on the fun!
Here is to Mom, and here is to us all! May we have many more wonderful days in this journey of life filled with the love and laughter. Surrounding ourselves with those we love brings life’s most beautiful moments; may we take hold of every opportunity to celebrate!
