What better time is there to celebrate than at a journey’s end? These gluten-free cookies would make a great take-along for hikes or travel, but that’s not exactly the type of journey I’m talking about today. You see, not long ago, my mom came to a long journey’s end of a different kind: she retired from a forty-year career as a NICU nurse!
While I was pondering what my son and I could make to help celebrate this momentous occasion, we talked about how Grandma wouldn’t have to go to work anymore, which made him very excited (he’s a smart little cookie, so I am sure he has figured out this just might mean he gets more “grandma time”)! Of course, he could make her a card, draw her a picture, or do any number of other typical “kid projects,” and any of these would have brought her joy, but they just didn’t seem special enough.
Then I remembered how much she had enjoyed these little cookies last time I made them! They are very easy to make, so a great recipe for my little guy to help with, they contain ingredients that don’t generally require an extra trip to the grocery store, they are gluten-free, which is of very high importance for Grandma, and -best of all- they are DELICIOUS!
