My mother-in-law gave me this recipe for Banana Muffins years ago, and they are oh, so tasty! We genuinely can’t make enough of them, and they are always gone in a flash! Even though my children never had the privilege of meeting their grandma, they love helping me make these banana muffins and other recipes of hers (like this Taco Noodles recipe)! It’s amazing how recipes can be such treasured heirlooms, allowing us to pass wonderful memories from one generation to the next! Follow along for a great recipe and some goofy pics of my little ones baking away!
For this recipe, you will need:
½ cup butter, softened
¾ cup sugar
1 egg, beaten
2 mashed, very ripe bananas
2 cups flour
¾ cup buttermilk or buttermilk substitute (like the one you can find here)
½ teaspoon vanilla
½ teaspoon salt
⅓ cup cinammon sugar (for topping)
Mix dry ingredients in a bowl and set aside.
Mash bananas in a bowl.
Combine wet ingredients with mashed bananas and mix into the dry ingredients.
Fill lined muffin tins ⅔ full and sprinkle with cinammon sugar. Bake at 400 degrees for 15-18 minutes. Let cool and enjoy! 🙂
