The return of Groot has been long-awaited in my household and these super-cute Baby Groot Cupcakes are the perect way to express our love for this fun little tree guy! Ever since the merchandising for “Guardians of the Galaxy: Volume 2” began, anytime we walk down a toy aisle, our sweet daughter delights in making all the Baby Groots dance, and she dances along, singing “Dancing, just dancing!” Last night, the family popped in the first “Guardians of the Galaxy” to freshen up on the storyline before my husband and I head to the theater -along with millions of others, I am sure- to enjoy the second installment!
My children’s enchantment with the character Groot -especially Baby Groot- inspired these cupcakes, and the idea kind of snowballed from there. I drew a quick sketch, labeling each area with what I planned to use for the creation, when my son -who had been intently watching and who was quite excited about this idea- blurted out: “What a great idea to use Mini Reese’s for Baby Groot’s head, Mom! He can’t read yet, so didn’t realize that I hadn’t thought of anything that genius: he is my hero, and I can’t believe how quickly he comes up with awesome ideas!
It gives me such delight to see my children having fun in the midst of all my crazy projects, and I truly hope you can enjoy making them with the special someones in your life, too! Whip up these Baby Groot cupcakes in celebration of the new movie, a birthday, or for an amazing Father in your life; I hope you will have as much fun as we did!
Baby Groot Cupcakes
For these cupcakes, you will need:
Cupcakes of choice (I used a Betty Crooker Double Chocolate cake mix to save time 🙂 )
Chocolate frosting (I used whipped chocolate frosting from a can 🙂 )
2 cups flaked coconut
Chocolate almond bark or candy melts
Twist pretzel sticks
Mini Reese’s cups
Green and black food coloring or gel color
First, mix up your cupcakes according to box directions or your favorite recipe, pour into lined cupcake tins, and bake accordingly.
While you are waiting for the cupcakes to bake and cool, go ahead and assemble your Baby Groots! Do this by melting the almond bark in a microwave-safe bowl for 30 second intervals, stirring in-between, until melted.
Lay out some wax paper and dip your pretzel sticks and place on the wax paper. Now, break your mini pretzels into pieces for Groot’s arms, dip them in melted bark, and attach them to the pretzel stick, about two thirds of the way up.
Color 1 ½ cups of the coconut green, and mix the other half with a little melted almond bark (reserving some to dip Baby Groot’s head in later on).
When your cupcakes are cool, it’s time to frost (don’t worry about frosting nicely; you won’t even see it), and make sure to save about ¼ cup for piping. Dip each frosted cupcake in green coconut, lightly patting it down.
Take your Baby Groot bodies and press one into each cupcake until almost touching the bottom.
Go back to what’s left of that almond bark and re-melt it if needed. Unwrap your Mini Reese’s (a perfect job for a little helper) and dip one at a time, placing one on top of each Baby Groot (You will need to hold each one in place for a few seconds so they don’t fall off)!
You are almost done! Grab that chocolate coconut and sprinkle the top of each Baby Groot’s head before they dry.
Mix a little black coloring into reserved chocolate frosting. Using your piping bag, pipe round eyes and a smile onto Each Baby Groot! 🙂 Now sit back and enjoy, or get up and DANCE!
