This Avocado Chicken Salad has become a standby for me in recent months! I eat it over lettuce salad, toast, corn chips, and -when I’m really feeling decedent- on buttery croissants! You might be wondering, “Why does she eat it so often?” Well, for one, it’s really tasty and easy to make, and for two, it’s a cold sandwich that’s actually safe for me to eat while I’m pregnant! You’ve probably heard that pregnant women should avoid lunchmeat and most things served at the deli counter. After a few sandwich-free months, I just really wanted a refreshing cold sandwich! That’s the “why” behind this Chicken Salad Sandwich, which uses canned chicken! The full recipe below will have you enjoying a delicious cold sandwich in a snap, too (pregnancy definitely not required!)!
Avocado Chicken Salad Sandwiches
For this recipe, you will need:
1 can cooked white meat chicken (drained)
2 Tablespoons Ranch (I use light)
1 avocado, diced
1 teaspoon coriander (My favorite spice; thank you, Rachael Ray, for introducing me to it!)
Juice from half a lime
Pinch of black pepper
Croissants or bread of your choice
In a bowl, combine chicken, avocado, ranch, coriander, lime juice, and pepper.
Gently mix and break up chicken clumps, if needed. Layer lettuce and chicken salad over croissants and enjoy!
