As the morning sun streams in, the dreams for this day flow through my head (like 4th of July cookies and having fun with my kids)! Admittedly, some of my thoughts are less glamorous (while a clean bathroom is glorious, the process of cultivating one is not). The cookies I hope to bake for my Dad are simply divine. There are about 20 other things swirling through my mind, too, and -let’s face it- they are not all going to happen today!
Instead of letting the overwhelming feeling that there are just not enough hours in this day take over our minds, let’s celebrate the fact that we have the freedom to choose, what happens today! You might be thinking, “You just don’t understand! No one else is going to clean my bathroom!” You’re right, no one else will, and although I like to keep my cleaning schedule, I have come to realize my “chores” won’t grow legs and walk away (although that would be just plain awesome), so I can take some liberties in scheduling them!
Take a moment soak in that Vitamin D and tell yourself, “I have the freedom to CHOOSE! I am free to take which ever path to work I desire today; I am free to ditch the bathroom because -after a week of rain- the park is finally dry enough to play on. I am free to say I am simply too tired to make cookies today and call my Dad to tell him I love him and hope he had a great day! Don’t get me wrong: I LOVE to bake and I tend to be a mover and shaker. You can ask my husband: I tend to throw out about 10 ideas for each day, and he just looks at me and asks, “Which do you want to do?”
That’s the question, really. The unfortunate reality is that you are going to have to clean that bathroom at some point, but think through your list and choose freedom! Leave that OVERWHELMED STRESSED-OUT FEELING BEHIND; there is no celebration in that! We are beyond blessed with freedom in this land! Free to choose for ourselves to live a life worth celebrating, and more immediately, a day worth celebrating!
4th of July Cookies
For this recipe you will need:
3 ¼ cups flour
¾ teaspoon salt
¾ teaspoon baking soada
1 cup melted butter
1 ½ cups packed brown sugar
¾ cup sugar
2 large eggs
1 egg yolk
1 tablespoon vanilla extract
2 cups M&Ms
Mix the flour, salt and baking soda together and set aside. Mix the melted butter, brown sugar, and sugar in a large bowl. Add the egg, egg yolk, and vanilla, and mix well. Add the flour mixture, gradually stirring in until just mixed.
Gently stir in the M&Ms (being careful to not break the pretty coating).
Using an ice cream scoop, drop mounds of dough onto a parchment-lined cookie sheet, but do not flatten. Bake at 325 degrees for 14-16 minutes or until lightly golden. Cool slightly on the cookie sheet. Remove and cool completely on a wire rack.
